Chopped Salad

A few weeks ago, I had a few of my friends over lunch.  We try to meet once a quarter these days, which proves to be a little difficult since they all have kids, husbands and very busy lives.  But when we do meet, it’s always a blast.  We’ve known each other since we were 10 or 11, about 35 years. Yikes.

Anyway, I served a nice little chopped salad.  I got the recipe from my mom, who got it from one of her church friends.  As always, I made a few changes to her recipe and the salad got raves.  So, I thought I’d post this new family recipe here, so that others can enjoy it!

Chopped Salad

4 cups Romaine lettuce, cut into strips
2 cups iceburg lettuce, cut into strips
12 leaves of fresh Basil, cut into strips
2 cups diced tomatoes, seeded
2 cups turkey, sliced into thin strips
2 cups salami, sliced into thin strips
2 cups mozzarella cheese

Place ingredients in a bowl, place in refrigerator for at least 1 hour to chill.

Salad Dressing

1 tsp. garlic, finely chopped
2 tsp shallots, finely chopped
2 tsp Dijon mustard
1 tsp dried oregano
2 tsp dried parsley
1/2 tsp pepper
1/4 tsp kosher salt
1/2 cup red wine vinegar
1 1/3 cup extra virgin/light olive oil
3 tsps dried Parmesan cheese (optional)

Place all ingrediants in a blender for about a minute to mix ingredients. Place in refrigerator at least an hour to chill.
Pour dressing on salad and mix immediatly before serving.
